Eggs Benedict is a delicious breakfast choice, but it's usually very high calories and high fat! However, this recipe tastes amazing and is less than 450 calories.

Ingredients
  • 2 Eggs
  • 1 Breakfast muffin
  • 4 Ham slices
  • 2 tbsp White wine vinegar
  • Pinch Salt and pepper
For the hollondaise
  • 2 tbsp Fat free plain yogurt
  • 2 tsp Light mayonnaise
  • 1.5 tbsp Melted butter
  • 1 tsp Brown mustard
  • 1 tsp Lemon juice
Instructions
For the poached eggs
  1. Bring a large pan of water to the boil, add the vinegar and reduce to a simmer. Gently crack the egg into the water and simmer for around 2-3 minutes until the egg white has set.

  2. Remove the egg from the pan with a slotted spoon and place onto a plate with some kitchen cloth (to remove the vinegar flavour), set aside to keep warm whilst you prepare the hollandaise.

To make the hollondaise
  1. In a pan melt the butter, meanwhile mix the yogurt, mustard, mayonnaise, lemon and some seasoning in a bowl. Whisk the clear liquid from the butter (try not to add the white fat solids into the mixture) to the bowl until the sauce forms a custard-like consistency.

  2. Slice the muffin in half and toast. Serve the ham and eggs on top of the toasted muffins and spoon hollandaise sauce over the top.
