Use this peri-peri marinade to really spice up your chicken and give it an amazing flavour.

  • 4/1.9 Lb/Kg Whole chicken
  • 2 tbsp Extra virgin olive oil
  • 3.5/100 Oz/g Peri-peri marinade
  • 1/2 Lemon
  • 1 tbsp Salt
  1. Heat oven to 392/200 F/C. In a bowl mix together the oil, salt, lemon juice & peri-peri sauce. Brush the chicken with the marinade then leave to marinate in the fridge for 1 hour for the flavours to develop. 

  2. Remove the chicken from the fridge and let sit at room temperature for 10 minutes. Place half the lemon you used for the marinade in the chicken cavity. 

  3. Roast in the oven basting frequently  with the marinade for 1 hr 30 mins or until the chicken is cooked.

  4. Remove from the oven, cover in foil and allow to rest for 20 minutes for the juices to redistribute throughout the meat.

  5. Serve with salad and baked potatoes for a simple but delicious dinner.
